Ha Gao: Ha Gao (蝦餃)is a traditional dim sum in Hong Kong cuisine. This scrumptious delicacy first appeared on the outskirts of Guangzhou. Traditionally, the ha gao is a test used to determine a chef’s skill level.

The Ha Gao should have at least seven, preferably ten or more pleats imprinted on its wrapper. The skin must be thick, translucent, and chewy, sturdy enough to not break upon coming in contact with a pair of chopsticks. It must not stick to the paper, and its meat content should be generous.
